My first time smoking in my 14" WSM, I had some trouble keeping the temperature high and it unfortunately cooked pretty low for too long by the time I figured out how to keep it up, so the skin was just rubbery and inedible.
The meat, however, was the best damn chicken I've ever made. I'm not sure that I want to cook anything any other way again. I'm completely hooked!
